Quick Chicken Fajita Sheet Pan Dinner

The easiest sheet pan chicken fajitas! Juicy chicken & bell peppers with homemade seasoning, all roasted on one pan for a 30-minute healthy dinner.

Ingredients

  • Boneless, skinless chicken breasts: 1.5 lbs, sliced into strips

  • Bell peppers (red, yellow, orange): 3 large, sliced

  • Yellow onion: 1 medium, sliced

  • Olive oil: 2 Tbsp

  • Fresh lime juice: from 1 lime (about 2 Tbsp)

  • Chili powder: 2 tsp

  • Ground cumin: 1 tsp

  • Onion powder: 1 tsp

  • Garlic powder: 1 tsp

  • Kosher salt: 1/2 tsp

  • Red pepper flakes: 1 pinch

Instructions

  1. Preheat oven to 425°F and lightly grease a large sheet pan.

  2. In a small bowl, mix chili powder, cumin, onion powdergarlic powder, and salt to create the homemade fajita seasoning.

  3. On the prepared baking sheet, combine chicken, bell peppers, and yellow onion. Drizzle with olive oil and sprinkle seasoning over top. Toss to coat evenly.

  4. Spread in a single layer and roast for 15-20 minutes, until chicken is cooked through.

  5. Remove from oven and drizzle with fresh lime juice. Serve immediately with warm tortillas and desired fajita toppings.

Notes

  • Don’t Crowd the Pan: For the best roast, spread the chicken and veggies in a single layer. Use two pans if necessary.

  • Spice Level: Adjust the red pepper flakes in the seasoning to your preferred heat level.

  • The Lime is Key: Don’t skip the fresh lime juice at the end! It brightens all the flavors.
