Ingredients

  • 1 cup (250g) plain Greek yogurt (full-fat or 2% recommended)
  • ½ medium cucumber, diced
  • 2 tbsp fresh dill, finely chopped
  • 1 tbsp red onion, finely diced (optional)
  • 1 small clove garlic, minced or grated
  • 1 tbsp fresh lemon juice
  • 1 tbsp ground flaxseed
  • Salt and freshly ground black pepper (to taste)
  • Optional: Drizzle of extra virgin olive oil

Instructions

  1. Season: In a serving bowl, combine the Greek yogurt, lemon juice, minced garlic, a pinch of salt, and a grind of black pepper. Stir well to combine.
  2. Top: Add the diced cucumber, red onion (if using), and chopped fresh dill on top of the yogurt base.
  3. Crunch: Sprinkle the ground flaxseed evenly over the bowl.
  4. Finish: Finish with an extra grind of black pepper and an optional drizzle of olive oil. Serve immediately.
