3 bell peppers (mixed colors), sliced

1 large yellow onion, sliced

2 tbsp olive oil

1 tsp Italian seasoning

Instructions

Preheat oven to 400°F (200°C).

On a large sheet pan, toss the sliced peppers and onion with olive oil, Italian seasoning, salt, and pepper.

Nestle the sausage links evenly among the vegetables on the pan.

Roast for 25-30 minutes, tossing the vegetables halfway through, until sausages are cooked through and vegetables are tender and caramelized.
