Ingredients
-
4 tilapia fillets (about 1.5 lbs)
-
2 tbsp olive oil
-
4 cloves garlic, minced
-
1 pint cherry tomatoes
-
1 lemon, thinly sliced, plus more for serving
-
1 tsp dried Italian seasoning (or dried oregano)
-
Salt and black pepper to taste
-
Fresh parsley, chopped (for garnish)
Instructions
-
Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
-
Place the tilapia fillets on the prepared baking sheet. Pat them dry with a paper towel.
-
Drizzle the fillets with olive oil and rub to coat. Sprinkle minced garlic evenly over each fillet. Season generously with salt, pepper, and dried Italian seasoning.
-
Arrange the lemon slices on top of the fillets. Scatter the cherry tomatoes around the fish on the baking sheet.
-
Bake for 12-15 minutes, or until the fish is opaque and flakes easily with a fork.
-
Remove from the oven. Sprinkle with fresh parsley and an extra squeeze of fresh lemon juice from the reserved lemon.
-
Serve immediately, spooning the juicy roasted tomatoes and pan juices over the fish.
Notes
-
Dry Fish: Patting the tilapia fillets dry is the key to getting the seasonings to stick and for the best texture.
-
Don’t Overcook: Tilapia cooks very quickly. Check it at the 12-minute mark to prevent it from becoming rubbery.
-
Fresh Herbs: If you have fresh thyme or dill, it would be delicious here in place of or in addition to the parsley.
-
Serving: This is best served immediately after baking.
