This One-Pan Lemon Garlic Tilapia with Roasted Tomatoes is light, fresh, and ready in 20 minutes! A healthy, flavorful fish dinner with easy cleanup.

Ingredients

  • 4 tilapia fillets (about 1.5 lbs)

  • 2 tbsp olive oil

  • 4 cloves garlic, minced

  • 1 pint cherry tomatoes

  • 1 lemon, thinly sliced, plus more for serving

  • 1 tsp dried Italian seasoning (or dried oregano)

  • Salt and black pepper to taste

  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.

  2. Place the tilapia fillets on the prepared baking sheet. Pat them dry with a paper towel.

  3. Drizzle the fillets with olive oil and rub to coat. Sprinkle minced garlic evenly over each fillet. Season generously with salt, pepper, and dried Italian seasoning.

  4. Arrange the lemon slices on top of the fillets. Scatter the cherry tomatoes around the fish on the baking sheet.

  5. Bake for 12-15 minutes, or until the fish is opaque and flakes easily with a fork.

  6. Remove from the oven. Sprinkle with fresh parsley and an extra squeeze of fresh lemon juice from the reserved lemon.

  7. Serve immediately, spooning the juicy roasted tomatoes and pan juices over the fish.

Notes

  • Dry Fish: Patting the tilapia fillets dry is the key to getting the seasonings to stick and for the best texture.

  • Don’t Overcook: Tilapia cooks very quickly. Check it at the 12-minute mark to prevent it from becoming rubbery.

  • Fresh Herbs: If you have fresh thyme or dill, it would be delicious here in place of or in addition to the parsley.

  • Serving: This is best served immediately after baking.
