Hearty Turkey & Sweet Potato Skillet

30-minute one-pan wonder with balanced macros for PCOS. Lean ground turkey, fiber-rich sweet potatoes & black beans with anti-inflammatory spices for hormone health.

Ingredients

  • 1 lb lean ground turkey

  • 2 medium sweet potatoes, diced

  • 1 can (15 oz) black beans, rinsed

  • 1 bell pepper, diced

  • 1 yellow onion, diced

  • 3 garlic cloves, minced

  • 2 tsp chili powder

  • 1 tsp cumin

  • 1 tsp onion powder

  • ½ tsp cayenne pepper (adjust to taste)

  • Salt and pepper to taste

  • 2 tbsp olive oil

  • ½ cup broth or water

  • Fresh cilantro or parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add ground turkey, season with salt and pepper, and cook until browned, 5-7 minutes.

  2. Push turkey to one side. Add onion, bell pepper, and garlic. Sauté 2 minutes until fragrant.

  3. Add diced sweet potato, black beans, chili powder, cumin, onion powder, and cayenne pepper. Stir to combine.

  4. Pour in broth, cover, and simmer 15-20 minutes until sweet potatoes are tender.

  5. Remove lid and cook 2-3 more minutes until liquid reduces.

  6. Garnish with fresh herbs and serve hot.

Notes

  • Meal Prep: Stores perfectly for 4-5 days in airtight containers

  • Extra Veggies: Add spinach or zucchini in the last 5 minutes
