1 lb lean ground turkey

2 medium sweet potatoes, diced

1 can (15 oz) black beans, rinsed

1 bell pepper, diced

1 yellow onion, diced

3 garlic cloves, minced

2 tsp chili powder

1 tsp cumin

1 tsp onion powder

½ tsp cayenne pepper (adjust to taste)

Salt and pepper to taste

2 tbsp olive oil

½ cup broth or water

Fresh cilantro or parsley for garnish
Instructions

Heat olive oil in a large skillet over medium-high heat. Add ground turkey, season with salt and pepper, and cook until browned, 5-7 minutes.

Push turkey to one side. Add onion, bell pepper, and garlic. Sauté 2 minutes until fragrant.

Add diced sweet potato, black beans, chili powder, cumin, onion powder, and cayenne pepper. Stir to combine.

Pour in broth, cover, and simmer 15-20 minutes until sweet potatoes are tender.

Remove lid and cook 2-3 more minutes until liquid reduces.

Garnish with fresh herbs and serve hot.
