Cheesy BBQ Chicken Quesadillas

These easy BBQ Chicken Quesadillas are ready in 20 minutes! Packed with smoky chicken, melty cheese, and crispy tortillas. The perfect quick meal!

Ingredients

  • 2 cups cooked shredded chicken

  • 1/2 cup BBQ sauce

  • 2 cups shredded cheese (cheddar/Monterey Jack blend)

  • 4 large flour tortillas

  • 2 tbsp chopped red onion (optional)

  • 2 tbsp chopped cilantro (optional)

  • Cooking spray or butter for cooking

Instructions

  1. In a medium bowl, mix shredded chicken with BBQ sauce until coated.

  2. Heat a large skillet over medium heat.

  3. Place one tortilla in the skillet. Sprinkle 1/4 cup cheese over half the tortilla.

  4. Top with 1/2 cup BBQ chicken mixture, red onion, cilantro, and remaining cheese.

  5. Fold tortilla over and cook for 2-3 minutes per side, until golden brown and crispy.

  6. Remove from skillet and repeat with remaining tortillas.

  7. Slice into wedges and serve immediately.

Notes

  • For extra crispy quesadillas, don’t overcrowd the skillet

  • Rotisserie chicken works perfectly for this recipe

  • Let them rest for 1-2 minutes before cutting for cleaner slices

  • Keep cooked quesadillas warm in a 200°F oven while finishing the batch
