2 cups cooked shredded chicken

1/2 cup BBQ sauce

2 cups shredded cheese (cheddar/Monterey Jack blend)

4 large flour tortillas

2 tbsp chopped red onion (optional)

2 tbsp chopped cilantro (optional)

Cooking spray or butter for cooking
Instructions

In a medium bowl, mix shredded chicken with BBQ sauce until coated.

Heat a large skillet over medium heat.

Place one tortilla in the skillet. Sprinkle 1/4 cup cheese over half the tortilla.

Top with 1/2 cup BBQ chicken mixture, red onion, cilantro, and remaining cheese.

Fold tortilla over and cook for 2-3 minutes per side, until golden brown and crispy.

Remove from skillet and repeat with remaining tortillas.

Slice into wedges and serve immediately.
