Ingredients
-
1 can (28 oz) whole peeled tomatoes
-
1/4 cup extra virgin olive oil
-
3-4 large cloves garlic, peeled
-
1 tsp salt, plus more to taste
-
1/2 cup heavy cream (whipping cream)
-
1 large bunch fresh basil, leaves torn
Instructions
-
To a blender, add the entire can of tomatoes (with their juices), olive oil, garlic cloves, and 1 tsp salt. Blend on high until completely smooth.
-
Pour the smooth tomato sauce into a large skillet. Bring to a gentle simmer over medium heat and cook for 5 minutes.
-
Reduce heat to low. Stir in the heavy cream and warm through (do not boil).
-
Remove the skillet from the heat. Stir in the torn basil until wilted.
-
Taste and adjust seasoning with more salt if needed. Use immediately over your favorite pasta or store for later.
Notes
-
Blending is Key: Don’t skip blending the sauce until completely smooth. This creates the perfect texture and quick-cooking base.
-
Fresh Herb Finish: Adding the basil off the heat preserves its bright green color and fresh flavor.
-
Cream Warning: Do not boil the sauce after adding the cream, as it could curdle.
