Ingredients
-
1 lb flank steak or sirloin, thinly sliced against the grain
-
1 large head broccoli, cut into florets
-
2 tbsp vegetable oil, divided
-
1 tbsp cornstarch
-
3 cloves garlic, minced
-
1 tsp fresh ginger, grated
For the Sauce:
-
1/3 cup low-sodium soy sauce
-
2 tbsp oyster sauce (or vegetarian alternative)
-
1 tbsp brown sugar or honey
-
2 tbsp water
-
1 tsp sesame oil
For Serving:
-
Cooked rice
-
Sesame seeds (for garnish)
Instructions
-
In a medium bowl, toss the sliced beef with cornstarch until evenly coated.
-
In a small bowl, whisk together all sauce ingredients.
-
Heat 1 tablespoon of oil in a large wok or skillet over high heat. Add the beef in a single layer and cook for 1-2 minutes per side until browned. Remove from pan.
-
Add remaining 1 tablespoon oil to the pan. Add broccoli and stir-fry for 2 minutes. Add 2 tablespoons water, cover, and steam for 1-2 minutes until bright green and crisp-tender.
-
Add garlic and ginger to the pan; cook for 30 seconds until fragrant.
-
Return beef to the pan. Pour sauce over everything and stir constantly for 1-2 minutes until sauce thickens and coats everything.
-
Remove from heat. Drizzle with sesame oil and toss to combine.
-
Serve immediately over rice, garnished with sesame seeds.
Notes
-
Slice Against the Grain: This is the most important step for tender beef.
-
High Heat: Keep the heat high for a proper stir-fry with crisp-tender veggies.
-
Velveting: The cornstarch coating creates a tender texture and helps thicken the sauce.
