Ingredients

  • 1 lb flank steak or sirloin, thinly sliced against the grain

  • 1 large head broccoli, cut into florets

  • 2 tbsp vegetable oil, divided

  • 1 tbsp cornstarch

  • 3 cloves garlic, minced

  • 1 tsp fresh ginger, grated

For the Sauce:

  • 1/3 cup low-sodium soy sauce

  • 2 tbsp oyster sauce (or vegetarian alternative)

  • 1 tbsp brown sugar or honey

  • 2 tbsp water

  • 1 tsp sesame oil

For Serving:

  • Cooked rice

  • Sesame seeds (for garnish)

Instructions

  1. In a medium bowl, toss the sliced beef with cornstarch until evenly coated.

  2. In a small bowl, whisk together all sauce ingredients.

  3. Heat 1 tablespoon of oil in a large wok or skillet over high heat. Add the beef in a single layer and cook for 1-2 minutes per side until browned. Remove from pan.

  4. Add remaining 1 tablespoon oil to the pan. Add broccoli and stir-fry for 2 minutes. Add 2 tablespoons water, cover, and steam for 1-2 minutes until bright green and crisp-tender.

  5. Add garlic and ginger to the pan; cook for 30 seconds until fragrant.

  6. Return beef to the pan. Pour sauce over everything and stir constantly for 1-2 minutes until sauce thickens and coats everything.

  7. Remove from heat. Drizzle with sesame oil and toss to combine.

  8. Serve immediately over rice, garnished with sesame seeds.

Notes

  • Slice Against the Grain: This is the most important step for tender beef.

  • High Heat: Keep the heat high for a proper stir-fry with crisp-tender veggies.

  • Velveting: The cornstarch coating creates a tender texture and helps thicken the sauce.
